Glassware: Wake-n-Bake has a bouquet of wonderful aromas but requires a bit of warmth to unleash all of them. Glassware that allows the beer to warm slowly yet trap aroma is best suited for the beer. If possible, the Spiegelau stout glass is a wonderful choice with its thin walls and tapered shape however, a snifter glass is also a great choice.

Description: Terrapin’s Wake-n-Bake pours a dark brown with beige head that leave very little lacing on the glass. The aroma is dominated by notes of fresh brewed coffee with backing hints of sweet chocolate. The taste follows the nose with coffee sitting front and center that imparts a smooth flavor without any bittering qualities as the delicious milk chocolate offers perfect balance to the coffee. The full body and medium carbonation are perfect for the style and give the beer its incredibly smooth mouthfeel. The high ABV is perfectly hidden with no appearance, but remember that it is 9.4 percent ABV, otherwise your night could end quickly. If you are a fan of coffee and stouts than this is a must try beer.

Food Pairing: The strong coffee and chocolate flavors are great with dessert, but this pairs well with meat, making it another great beer for Thanksgiving. Try pairing with a coffee rubbed steak topped with creamy bleu cheese for a dream dinner after the holiday. The coffee rub will add a touch of bitterness while the bleu cheese and chocolate will meld together for a truly creamy experience and the beer has enough heft to scrub the palate clean. A pairing with roasted turkey or chicken is wonderful as the natural sweetness of the meat will be enhanced by the sweet malts. Hints of bitterness from the coffee will provide perfect balance. This beer goes well with desserts and the creamier the better. Try with cheesecake, any topping will be perfect, however chocolate, cherry, and caramel all are especially enjoyable with Wake-n-Bake. Pumpkin flavored desserts are a good option as the balance of spices are a welcome accompaniment to the chocolate and coffee flavors. On its own, this beer could constitute a well balanced dessert.

The Final Word: Terrapin brews high quality beers since it first opened doors in 2002. The brewery continues to grow and release some incredible beers. However, its Wake-N-Back Coffee Oatmeal Stout remains one of its best and is a much sought after beer upon its winter release. The coffee and sweet chocolate notes are the perfect pairing for any cold winter evening. While the ABV is high, the flavors and aroma hide the alcohol and Wake-n-Bake comes across as an unbelievably easy drinking imperial stout. This is a great beer now available in cans.
